| As in all baking, stick to the recipe. You won't regret it. Ingredients: ~I box yellow cake mix (Georgeann has found Duncan Hines turns out the best) ~1/8th cup pineapple juice with one can sliced pineapple. ~Sixteen Maraschino cherries with 1/8th cup of Maraschino cherry juice. ~Three eggs (size is not important) ~1/8th cup water. ~1/3rd cup cooking oil. ~1/2 cup brown sugar. Prep: Preheat the oven to 350F/176.66C. Grease a 9" x 13" / 23 x 33CM non-stick cake pan 1.) Mix eggs, oil, water, and cake mix along with the pineapple juice, and Maraschino cherry juice. 2.) The ingredients say water, but at your choice, you can replace the water with rum for that extra zing! 3.) Using a mixer, combine these ingredients until smooth. 4.) Arrange the pineapple rings on the bottom of the cake pan. Put the cherries in the center of each ring. 5.) Cover fruit with brown sugar.Then carefully pour the cake mixture over the fruit till it covers the whole pan. 6.) Put in the over and bake at 25-30 minutes. (A toothpick inserted in the center should come out clean) 7.) Turn the pan upside-down. But before doing this,loosen the edges of the cake with a knife and hit the bottom of the pan with your palm. That's it! You're done. Now go try that cake. Just give in to it: you will have seconds! | |

| Ingredients: 1 1/2 cups baking mix 1/2 cup sugar 2 tblspoons softened margarine or butter 1 egg 3/4ths cup sour cream or unflavored yogurt 1 tspoon vanilla Streussel (below) Heat oven to 350F/176.67C. Grease a square pan, 8 " x 8" x 2". ( 21cm x 21cm x 5cm) Mix all ingredients except Streusel. Beat vigorously for 1 minute. Spread in pan. Sprinkle with Streusel. Bake until wooden toothpick inserted in the center comes out clean. Cool 10 minutes. Cut into squares. Nine servings. Streusel: Mix 1/4th cup of baking mix or all purpose flour, 3 tablespoons sugar, 1/2 teaspoon ground cinnamon and 2 tablespoons of firm margarine or butter until crumbly. | Bread pudding Sauce: 4 cups Cubed bread 1/2 cup butter 1/2 cup raisins 1/2 cup white sugar 2 cups milk 1/2 cup firmly packed brown sugar 1/4 cup butter 1/2 cup whipped heavy cream 2 large eggs 1 tblspn vanilla 1/2 cup white sugar 1tblspn vanilla 1/2 tspn ground nutmeg Preheat oven to 350F/176.66C. 1.) Combine bread and raisins in bowl. Set aside. NOTE: If desired, add 1/3 cup of rum. A true Pirate will add 2/3rd's cup. But set them aside and let the rum absorb fore two hours before continuing. 2.) Combine milk, 1/3 cup butter, and cook over medium heat until butter is melted. Pour mixture over bread and let stand for ten minutes. 3.) Stir in all remaining ingredients.Then pour into (pre-greased) casserole dish.Bake 40-50 minutes. 4.) Combine all sauce ingredients EXCEPT vanilla. Cook over medium heat. Stir in vanilla carefully. 5.) Stir occasionally 5-8 minutes, or wait till mixture thickens and comes to a full boil. NOW add vanilla. 6.) Spoon warm pudding into individual bowls. Serve with sauce poured over pudding. | |

| Bread pudding is always considered as a lowly dish.......if even considered at all. Just recently, I have been increasingly more aware of this treat, and been taking full advantage of it. Pour a little half and half or better yet, whipping cream on it. Oh your taste buds will go off the spectrum. | |

| Ingredients: 21/4 cups of flour 3/4 cup sugar (white) 3/4 cup brown sugar 1 tspn vanilla 1 cup butter 1tspn baking soda. 1tspn salt 2 cups butterscotch chips 2 large eggs 1.) Mix the flour, salt, baking soda, in a small bowl and set aside. 2.) Cream together sugars and butter, then add vanilla. Add the eggs one at a time slowly. Then add the flour mixes. Then the butterscotch chips. 3.) Now add the flour mix, followed by the butterscotch chips. 4.) Put in freezer for 1-2 hours. Then drop by a teaspoon to ungreased cookie pan. 5.) Bake 8-10 minutes at 375 F Makes 5 dozen. | |
