| Big dap of real butter in pan. Medium high heat til it's melted brown and smoking. Leave the heat on same setting. Throw steak on it for 5 minutes each side. Don't touch it, press down on it, or move it during each of the 5 minutes. That's a mistake folks make when cooking steaks and burgers at home or in restaurants kitchens. Constantly touching them, moving them, flipping them. NO!!! Put it down, leave it alone for 5 minutes , flip it over, leave it alone again for 5 minutes. Take it off heat. Place on cold plate.
