About the Author
Kim Wilcox is a renowned chef and restaurant owner of the family-owned and operated It's All So Yummy restaurant in Knoxville, Tennessee. For more than 10 years, It's All So Yummy Café has been serving residents homemade soups, salads, sandwiches, ice cream, and their most famous specialty, savory, and unique grilled cheese sandwiches. Beginning in 2009, Chef Kim Wilcox started her business with just one cake on the menu! It has since grown and evolved, and Kim has offered 120 varieties of grilled cheese sandwiches using locally acquired and seasonal ingredients. Kim's restaurant has been featured on the Food Network, the Cooking Channel, and local news programs. An inventive and out-of-the-box chef, Kim has also appeared in the wildly popular title, The Ultimate SPAM (R) Cookbook, contributing two of her original recipes.
