Food of animal origin provides about one-sixth of human food energy and one-third of human food protein, and demand is accelerating with the growth in population and affluence, especially in developing countries. Animal products make a crucial contribu-tion to the continuing struggle to alleviate alarmingly prevalent malnutrition in the world.
