| 900g stewing steak, diced 25g flour, plus extra for dusting 100g butter 2 onions roughly chopped 2 cloves of garlic, roughly chopped 2 medium carrots, roughly chopped 150g button mushrooms 2 sprigs fresh thyme 400ml good-quality ale 500ml beef stock Salt and pepper For the pastry 300g ready-made rolled puff pastry 1 egg, beaten for glazing METHOD Pour flour into a bowl and season well. Coat the meat with seasoned flour. Heat half the butter in a heated pan and add the meat. Sear all over until golden brown. Add the vegetables, herbs, ale, and stock. Bring to a simmer, then cover with a lid and gently simmer for 1 hr. When cooked, season, add the remaining butter, and pour into an ovenproof serving dish. Brush the edge of the dish with the beaten egg. Roll out the pastry using as little flour as possible and place it over the dish. Pinch the edges of the dish so that the pastry will stick to it and trim off any remaining pieces of pastry from around the edge. Brush the pastry top thoroughly with the remaining beaten egg and place on a baking tray. Top Tip - Make sure the filling is cooled slightly before adding the pastry otherwise the pastry will begin to soften and will be hard to manipulate into the pie top style you're after. | |

I used chcken. Can use anything in the oven at 175 c . When the potatoes begins to be a little soft(half-done), take out the meat. add 1/8l of cream(more if you like ofc hehe). A handfull of your chosen fresh herbs(I used oregano). Put the meat on the top again and finish it with 20mins more in the oven. I forgot to take pics. It even looks good | |

| Cauliflower soup Delicious, nutritious and super healthy Ingredients 2 tablespoons butter 2 onions, roughly chopped 1 large cauliflower (about 600 g) 250 ml whipping cream Preparation Melt the butter in a large pan and fry the onion on medium heat for 5 minutes, do not let it brown. Remove the green and cut the cauliflower vertically into 1 cm thick slices. Cut away the tough stalk. Place the cauliflower slices in the pan with the onion and pour 1 litre of water or chicken stock over it. Add salt and pepper. Bring the liquid to the boil and let it simmer gently for 15 minutes, until the cauliflower is cooked. Add the cream and cook the soup for another 5 minutes. Puree the cauliflower soup with a hand blender and taste to see if it needs extra salt or pepper. Additional required: Hand blender. | |
