About the Authors:

Joel Gazdar and Aiste Gazdar are founders of the iconic plant-based restaurant in Wild Food Café in Covent Garden. Alongside the Wild Food Café, they run sell-out plant-based cookery courses and chef-training programmes and retreats. In 2018 they opened a second Wild Food Café in Islington.
